Delicious Frozen Coconut Treat Recipe
These quick and easy, coconut yoghurt pops are a delicious and simple way to add superfoods to your diet and boost immunity. Even the kids will be gobbling up the frozen goodness. Sneaky, huh?
See below for the easy recipe:
- 2 Cups plain coconut yoghurt (you can use a vegan option if you prefer)
- ½ Cup desiccated coconut
- 1 tsp Superfoods Lucuma powder
- 1/2 cup blended or mashed blueberries, strawberries or similar
Add yoghurt, desiccated coconut, Lucuma Powder and berries to a mixing bowl and stir to combine.
Pour evenly into lolly moulds and set aside in the freezer for 1 hour.
Remove from the freezer and gently push wooden sticks into the middle of the moulds and place back into the freezer 6-8 hours or overnight.
Once set, remove from the freezer for a few minutes before removing from the mould. Sprinkle over some crushed, freeze-dried blueberries and serve.
